Peanut Sauce from 'Ohana at Disney's Polynesian Resort
Spicy Asian sauce goes nutty with flavor
Published April 10, 2003

Spicy peanut sauces are a staple of Asian menus. Balanced and full-flavored, they complement a variety of meat and rice dishes.

This week's recipe request fills that bill with a luscious, full-flavored liquid from chef Michael Thompson of 'Ohana at Disney's Polynesian resort.

The sauce gets a flavor kick from the addition of Thai curry paste, which is sold in Indian and Asian markets, some gourmet stores and the ethnic-foods section of larger supermarkets. The thick paste is an intense blend of ghee (clarified butter), curry powder, vinegar and other seasonings.

About this restaurant

'Ohana is located at Disney's Polynesian Resort in Lake Buena Vista. Orlando Sentinel restaurant critic Scott Joseph says: " 'Ohana is a fun restaurant with good food served off skewers at the tableside. There is no menu -- just sit down and the food starts to arrive. The fare includes sausages, beef and other meats. Not really a good choice for vegetarians. Make sure you sit in the main dining room; otherwise, you'll miss a lot of the fun and games that take place as part of the ongoing entertainment." Fixed-price dinners are $23.99 for adults and $9.99 for children ages 3-11 ($16.99 adults, $8.99 children for character breakfast). For dining information, call 407-939-3463
