Hello,
Does anyone have the recipe for the brushetta at the Hollywood and Vine Resturant. I at there and the food and service is EXCELLENT. Please help me. Thanks

This one is said to be the bruschetta served at WDW's Flying Fish restaurant. I hope it is similar to the one at D-MGM's Hollywood and Vine restaurant:

Portabello and Sun-dried Tomato Bruschetta
Serves: 4
cup sun-dried tomatoes
1 cup water
2 teaspoons balsamic vinegar
4 portabello mushroom caps
3 cloves garlic
3 tablespoons olive oil

In a small saucepan, simmer tomatoes in water, uncovered, until tender, about 10 minutes.

In a blender, puree tomatoes, cooking liquid and vinegar until smooth and season with kosher salt and fresh ground pepper.

Cut mushrooms into -inch chunks and mince garlic. In a large skillet heat 2 teaspoons oil over moderate heat until hot but not smoking and cook mushrooms and garlic with salt and pepper to taste, stirring, until liquid mushrooms give off is evaporated, about 5 minutes.

Remove skillet from heat and toss mushrooms with remaining tablespoon oil.

Toast bread (grill pan works great) and top with tomatoes and mushrooms.

Aha! Found it! (Gotta love that Google! )

This is the actual Bruschetta recipe from D-MGM's Hollywood & Vine restaurant:

1 lb diced tomatoes
1 T. French basil chiffonade
2 T. diced onions
1 T. minced garlic
2 T. shredded mozzarella
2 oz. white balsamic vinegar
2 oz. olive oil
Kosher salt to taste
Ground black pepper to taste


Mix all ingredients and serve over taosted Ciabatta bread slices.

Thank you so much for finding the recipe. I went there and I had dinner and I loved the Brushetta so much that I asked our waitress for the recipe and she was kind enough to give it to me. But what made it even special is that it was signed by the head chef of the resturant and it was the actual recipe card. I was so happy that night. But I lost it.  :cry: Thanks again  :cool:
