Corn Bread

Disney's Wilderness Lodge and Disney's Fort Wilderness Resort & Campground

Whispering Canyon Cafe and Trails End Restaurant

Yield: 1 Pan

Ingredients

1¾ cups all-purpose flour
¾ cup cornmeal
1¼ cups granulated sugar
1½ teaspoons salt
1 tablespoon baking powder
½ cup vegetable oil
2 each large eggs, beaten
1 cup milk

Method of Preparation

Add flour, cornmeal, salt, baking powder, and sugar together in a mixing bowl and blend.
Combine milk, eggs, and oil in another bowl and blend together; slowly add liquid to the bowl of dry ingredients; mixing as you add liquid. Mix only enough to incorporate together.
Spray a 9 x 13 cake pan with a non-stick food spray and pour the cornmeal batter into the pan. Make sure to spread evenly in the pan.
Bake in a preheated oven at 375°F for 20-25 minutes or until golden brown.

Berry Cobbler
Artist Point - Wilderness Lodge Resort

3 cups all-purpose flour
1/4 tbsp. salt
2 1/2 tbsp. baking powder
1 1/8 cups granulated sugar
1/2 cup unsalted butter
2 eggs
1 cup heavy cream
2 cups blueberries or other seasonal berries
8 tbsp. brown sugar
8 tbsp. unsalted butter
Whipped cream or ice cream

Combine the flour, salt, baking powder and sugar. Break the butter apart into small pieces and mix it in. Add the eggs and stir until just absorbed. Add the heavy cream and mix just enough to incorporate (batter should be lumpy). Divide the dough into four pieces.

In four 6 inch cake pans lined with parchment paper, place the pieces of dough, spread evenly along bottom of the pans. Spread the blueberries on top of each piece. Sprinkle each with 2 tablespoons brown sugar. Dot each with 1 tablespoon butter.

Bake in a preheated 350 degree oven for 15 minutes, or until an inserted toothpick comes out clean and dry. Cobblers should be lightly browned. Cool to room temperature, add fresh berries (if desired) and serve with a dollop of chilled whipped cream or vanilla ice cream.

Tonga Toast
Kona Cafe

2 or 4 slices sourdough bread, cut 1 to 1 1/2 inches thick
1 banana
1/3 cup sugar
1 teaspoon cinnamon
1 egg
1/4 cup milk
1/2 teaspoon vanilla
oil or shortening for frying
whipped butter and/or syrup

Cut a 1-inch pocket in one side of each bread slice. Cut banana in half crosswise, then split each piece lengthwise. Remove peel and stuff 2 pieces of fruit in each pocket of bread; set aside. Mix sugar and cinnamon; set aside. Mix well the egg, milk and vanilla.

Heat about 4 inches of oil in a pan to 350 degrees F. Dip stuffed bread into egg/milk mixture and let it soak a few seconds to let penetrate bread. Fry bread on both sides in hot oil until lightly browned, about 3 minutes. Drain on paper towels or wire rack. Sprinkle with cinnamon sugar and serve.

Parmesan Potatoes

Chef Mickey's - Contemporary Resort

3 large baking potatoes
3 Tbsp. butter
1/2 C. grated Parmesan
1 C. warm milk

Peel the potatoes and cut into chunks and boil about 15 minutes until tender. Mash, using a potato masher or a heavy fork. Put back in the pot with the butter, cheese and milk. Blend well, adding salt and pepper to taste.

Ingredients:

2 whole boneless chicken breasts                                    
 Salt and white pepper to taste    
4 slices Swiss cheese                                
4 slices cooked ham, 1/8-inch thick          
6 tablespoons flour                                          
2 eggs, beaten
1 tablespoon water
6 tablespoons fine dry bread crumbs
4 tablespoons butter

Remove skin from chicken breasts and discard. Between two pieces of wax paper, flatten breasts with a wooden mallet until quite thin. Cut each into 2 pieces crosswise. Season to taste with salt and pepper. Lay a slice of cheese and slice of ham on each piece of breast and roll. Mix eggs with water and dip chicken in egg, then in flour, then in egg again and finally in crumbs. Melt butter in a flat baking dish and bake chicken at 350 degrees F. for 20 min. or until lightly browned.

Makes 2 cups
Used to marinate turkey

Ingredients:

2 T minced garlic
1 c olive oil
1/4 c malt vinegar
1/4 c lemon juice
3 dashes tabasco
1 tsp kosher salt
1/2 tsp black pepper
1/4 c brown sugar

Directions:

Palce garlic in food processer (blender) with 1/4 c oil.  Fine chop.  With machine still running, slowly add remaining oil.  Add remaining ingredients and whip until blended.  Marinate 4 hours or overnight. Can be used on turkey, pork or chicken.

This is a mudslide recipe, though you would need your own Vodka to do this as I don't remember there being any in the lounge.

Ingredients
1/2 ounce Vodka
1/2 ounce Kahlua
1/4 ounce Irish Cream liqueur
Combine with cracked ice in a shaker. Shake well and strain into chilled cocktail glass.

Finally got the recipie for that delicious homemade bread they serve at Kona Cafe'. E-mail states it came from Michael Thompsom, Chef de cusine! :)

Disney's Polynesian Resort - Kona Cafe' restaurant

Yield one (1) 9x13 cookie sheet

Ingredients:

2 cups All Purpose Flour
3 Tbsp. Sugar
1 Tsp. Salt
1 Cup Milk
1/2 Cup Water
1/2 Stick Butter or Margarine (softened)
Sprinkle of Mrs. Dash

Preparation:

1. In a mixing bowl, add liquids to dry ingredients and mix with
  with a dough hook until dough pulls away from bowl.
2. Roll into a ball and chill for one (1) hour.
3. Roll out dough on a floured surface to 1/8 inch or cracker
   thin.
4. Place on a lightly greased cookie pan and cut into triangles
  with pizza cutter.
5. Sprinkle with water and then with Mrs. Dash.
6. Bake at 350 degrees for 8-12 minutes or until golden brown.
7. Let cool and serve with salad or dinner.
