Which of these are buffets?
Is there a list of which characters are at each?
Does anyone know the hours for breakfast?
Let me pull out my Walt Disney World guide book and list everything I can find in it.
Scottwdw is absolutely right, reservations are highly recommended because character dining is hugely popular! In case for some reason you end up not being able to make plans for character dining until the last minute, call up their dining hotline and ask for the best time you can show up for a particular meal when you would be most likely to get a table. I'm trying to type all the phone numbers I see here, but I'm not so sure this is all of them and I can't recall any others from memory. If I find more I'll let you know, and anybody out there please feel free to make any corrections as my book is from 2000 and I haven't been able to afford a more up-to-date edition yet!

Call (407) 939-3463 for breakfasts at Disney resorts or in theme parks. For non-Disney hotels, call the hotel directly.
Character breakfasts, by location:
Disney-MGM: Hollywood & Vine Cafeteria of the Stars
This buffet, daily from 8:30 to 11:15 a.m., features Minnie, Chin 'n' Dale, Goofy and Pluto. Cost is $15 for adults and $8 for children ages 3 to 11. The price of the character meal is in addition to your admission to the park. Priority seating is highly recommended.
Epcot: The Garden Grill Restaurant
This breakfast is served daily from park opening to 11:10 a.m. The menu is fixed, but seconds are available. Cost is $15 for adults and $9 for children ages 3 to 11. Characters include Mickey, Pluto, and Chip 'n' Dale. The price of the character meal is in addition to your admission to the park.
Magic Kingdom: Cinderella's Royal Table in Cinderella Castle
Served daily from 8 to 10 a.m., the breakfast features Cinderella and Snow White, plus visiting character friends. The menu is fixed. Cost is $15 for adults and $8 for children ages 3 to 11. The price of the character meal is in addition to your admission to the park. Call early; priority seating is required, and the breakfast is booked year-round. In fact, it is recommended that you call 60 days prior to your desired reservation to ensure a table. No walk-ins are accepted.
Magic Kingdom: The Crystal Palace
A Winnie The Pooh buffet breakfast is served daily from 8 to 10:45 a.m., hosted by Pooh, Tigger, and Eeyore. Cost is $15 for adults and $8 for children ages 3 to 11. Priority seating is recommended.
Disney's Beach Club Resort: Cape May Cafe
This buffet breakfast is served daily from 7:30 to 11 a.m. The Characters in Charge are Goofy and Minnie, assisted by Chip 'n' Dale. Cost is $15 for adults and $9 for children ages 3 to 11. Softer background music and broader food choices make this a good location for adults who want a taste of characters or for parents who are maxed out on the World's frantic pace.
Wilderness Lodge: Artist Point
Winnie The Pooh, Tigger, and Eeyore hold court at this breakfast served daily from 7:30 to 11:30 a.m. Cost is $15 for adults and $9 for children ages 3 to 11. The menu is all-you-can-eat, with family-style service. This breakfast is one of the quieter of the species.
Contemporary Resort: Chef Mickey's
(This one is a personal fave of mine by the way)
Mickey, Minnie, Goofy, and Chip 'n' Dale host this buffet daily from 7 to 11:30 a.m. Cost is $15 for adults and $8 for children ages 3 to 11. NOTE: Chef Mickey's was moved from the Downtown Disney Marketplace to the Contemporary Resort in 1995.
Polynesian Resort: 'Ohana
This tropical-theme breakfast is named Minnie's Menehune. It's served daily from 7:30 to 11 a.m. Cost is $15 for adults and $9 for children ages 3 to 11. Minnie reigns, in a grass skirt no less (!!! ), assisted by Goofy and Chip 'n' Dale. Service is family-style.
Grand Floridian Beach Resort: 1900 Park Fare
Mary Poppins, Minnie, Pluto, and Alice and The Mad Hatter host this buffet breakfast daily from 7:30 to 11:30 a.m. Cost is $16 for adults and $10 for children ages 3 to 11. Calliope music plays throughout the meal which this book describes as "maddening" (deliberately by the Hatter?).
Walt Disney World Swan: Garden Grove Cafe
Held only on Saturdays from 6:30 to 11 a.m., the Garden Grove character breakfast offers a choice of buffet or meny selection. Pluto and Goofy usually are the characters present. Cost is about $17 for adults and $11 for children ages 3 to 11. Priority seating is not accepted. Foe details, call (407) 934-3000 or (407) 934-1618.
Old Key West Resort: Olivia's Cafe
Winnie The Pooh, Tigger, and Eeyore host this breakfast on Sundays, Mondays, and Wednesdays from 7:30 to 11 a.m. Cost is $14 for adults and $9 for children ages 3 to 11.
